Coat pan with olive oil, brown chicken on both sides

Deglaze pan with half cup red wine and add an onions and peppers cook for three minutes then add in mushrooms and garlic cooking for another three minutes

Add in 1 32 ounce can of whole peeled tomatoes and olives add oregano, thyme, basil, salt & pepper

Add chicken back to pan with vegetables and allow to cook for an additional 30 minutes on a low simmer
