Start by gently preheating a skillet over low heat, then increase to medium-high while you prepare the ingredients. Crack the eggs into a bowl, add a little milk, and finely chop half an onion. Crumble the Bleu cheese and Roquefort to your taste.

Add as much chives as you like. Stir everything together, adding a pinch of salt, until the mixture is fairly uniform. Generously butter the skillet and sprinkle a little salt on the surface.

When the butter is melted and bubbling, pour in the egg mixture. Let it cook for 5 to 10 minutes, then fold the omelette over by a third. Wait another 5 minutes, then serve carefully with a touch of pride. Enjoy!
