Japanese egg sandwiches

This egg sando has been popularized by Japanese convenience store hauls, but has been around forever! It’s a nostalgic lunch for me and many Japanese kids. I like adding a touch of lemon juice to brighten things up!

This egg sando has been popularized by Japanese convenience store hauls, but has been around forever! It’s a nostalgic lunch for me and many Japanese kids. I like adding a touch of lemon juice to brighten things up!
Steps

Put the eggs in a pot and cover with cold water over high heat. Once boiling, set a timer for 10 minutes.

Gently place the eggs in an ice bath and let rest for 10 minutes. Peel the eggs and wipe the water off the surface.

Separate the eggs by the egg yolk and egg whites. To a bowl, transfer the egg yolks and mix in all of the ingredients until everything is mashed together.

Chop the egg whites and add it in the yolk mixture.

Put the egg salad on a slice of bread and cover with another slice. Cut the crusts off if desired, garnish with parsley, and enjoy!
