The Bride's veil, is a Bihari one pot meal that is as comforting as poetic . The dish gets its curious name from the hollow, whole wheat dumplings that looks like a veil of a dulhan or bride . The shape of the dumplings , however differs , and its name with it , if it is flat it is called dal pithi & if they are stuffed they are referred to as dal ki dulhan.
One thing that all these variants have in common is that it makes a hearty one - pot meal , and requires no other embellishments than a spicy mango pickle. The soupy consistency of the dal & the soaked dumplings simmered in a generous amount of ghee , garlic & onions makes for a delicious restorative dish .

Dulhan : Combine flour, salt, ghee & mix well. Add water & knead to a soft dough.Apply a splash of ghee over the dough. Cover & keep aside for 20 minutes.

After the rest, knead the dough. Take a big portion of the dough & roll with a little dry flour into a big chapati. Make a thin chapati.

Now with the help of a cutter, cut small puris from the chapati. Take 1 small puri in your hand & apply little water on the edges. Now stick the opposite edges as shown in the pic below.👇The pleates look like the veil of the bride. Make all dulhan like this & keep aside.

Dal : Wash the dals thoroughly. Soak the dal for 30 minutes.

Add this dal with the soaked water in a pressure cooker. Add turmeric powder, salt & oil. Take 3 - 4 whistles. Cool & once the pressure is released, open the pressure cooker. Keep aside.

Tempering it the dal : Take a non-stick pan, add ghee & mustard seeds. When mustard seeds splutter, add cumin seeds, bay leaves & asafoetida. Add green chillies & dry red chillies.Saute. Add garlic & ginger. Saute.

Add onions.Do not brown the onions but only light pink in color. Add turmeric & red chilli powder. Give it a quick stir. Add in tomatoes & cook till they soften. Cook very well so all the flavors merge very well.

Add cooked dal to the tempering & mix very well. Now add water to make the dal thin. Drop 1 by 1 all the pithi in the dal & give it 1 stir. Cover & cook both the dal & the pithi very well, till the pithi are completely cooked, about 3 - 4 minutes. Once the pithi are cooked, they will float on the top.

Serve Dal ki Dulhan in a plate & garnish with raw mango pickle. Our tasty, flavorful Dal Ki Dulhan is ready to be devoured.
