Stir-Fried Broccolini with Velvet Antler Mushrooms (Vegan)

Velvet antler mushrooms are a prized variety that rehydrate quickly—just 30 minutes is enough. They stay crisp and sweet when stir-fried. This was my first time making broccolini at home, even though I often order it at restaurants. This vegetable is usually stir-fried with oyster sauce, but since this is a vegan dish, I used velvet antler mushrooms instead.

Prepare the broccolini: Cut off the tender tops and split them in half. Cut the leafy parts into pieces. Peel the stems and slice them into bite-sized pieces. Blanch in boiling water with a pinch of salt for 2 minutes. Drain and rinse under cold water, then squeeze out excess water.

Soak the dried velvet antler mushrooms in water for 30 minutes, then squeeze out excess water. Sauté the minced garlic until fragrant, add the mushrooms, and stir-fry. Add the broccolini and stir-fry for 2 minutes with the soy sauce. I keep it simple without seasoning powder, but feel free to adjust to your family's taste!

Transfer to a plate and sprinkle with a little ground black pepper.
