Ripe Papaya Summer Salad is a refreshing tropical dish that combines the sweet and tropical flavor of papaya with the crispness of cucumber. This salad can be eaten as it is or as a side with pasta, rice or any seafood meals.

Peel the papaya. Cut it into half and scoop out the seeds with a spoon.Then cut the papaya into bite sized cubes.Peel the cucumber and cut into cubes. Cut and deseed half tomato.Finely chop onion and mince 2 garlic cloves.

Place cucumber,tomato,minced garlic and finely chopped onion.Add cubed papaya. Spread evenly all the fruits and vegetables. In a small bowl dilute sugar or honey, lemon juice or vinegar, pinch of salt.The dressing should be sweet and tangy.Drizzle the dressing over papaya, cucumber, grapes, tomato, red onion, chopped cilantro and mint leaves. Sprinkle black pepper powder,red chilli flakes(optional), chaat masala.

Gently toss the salad ingredients together to coat the fruits and vegetables well with the dressing. Finish the salad by garnishing it with chopped toasted almonds, few mint leaves and cilantro.Refrigerate for 20 minutes before serving for the flavours to infuse in the salad and serve chilled.
