Roast cuminseeeds, sesame seeds, groundut and coconut. I have already powdered coconut so I added last while grinding. Add remaining ingredients and grind to a coarse masala

Meanwhile slit brinjals and keep in salt water. Mix chopped onions to masala and mix well. Stuff the brinjals

Heat oil, add cumin seeds, mustard seeds, leftover masala, tomatoes. Add water and brinjals and cook covered for about 15mts or till brinjal is tender

Add chopped coriander and serve hot
