This is a delicious strawberry latte you can make at home to cool off!
It combines homemade strawberry puree with soy milk, oat milk, or regular milk, and strong espresso coffee.
It comes together in less than 20 minutes. It’s so easy to prepare and such a tasty way to enjoy your coffee this spring and welcome summer! ☀️

For the syrup: Wash the strawberries and cut them into quarters. Make sure you have 1 cup.

Transfer the strawberries to a small saucepan, then add the maple syrup and water.

Bring to a boil, then reduce the heat to medium. Simmer uncovered for about 10-15 minutes, occasionally pressing the strawberries with a spoon or spatula. The mixture is ready when the fruit is very soft and syrupy.

At this point, use an immersion blender or regular blender to puree the strawberries. Place the syrup in the fridge to chill until ready to use.

For the latte: Brew the espresso or strong coffee. Place it in the fridge until serving.

To serve, add about 2-3 tablespoons of strawberry syrup to the bottom of a serving glass (I used all of it, but you can use half and save the rest for another time or to make two glasses).

Next, add plenty of ice cubes, then slowly pour in the soy milk. Pour the coffee on top, stir, and enjoy right away! Garnish with a strawberry if you like! 🍓
