Ingredients

  1. 1eggplant
  2. 2potatoes
  3. 1grated tomato
  4. 2 clovesgarlic, minced
  5. 1onion, thinly sliced
  6. Salt, pepper, and cumin
  7. For the gratin mixture
  8. 3eggs
  9. 3.5 ozcottage cheese (100 g)
  10. Salt and pepper

Steps

45 minutes
  1. 1

    Grill the eggplant, remove the skin, and cut into pieces.

    Peel, wash, and dice the potatoes. Drizzle with olive oil, season with salt and pepper, and roast in the oven.

    Place the grated tomato, onion, and garlic in a baking dish. Drizzle with olive oil and roast the vegetables.

    Mix the vegetables together, add the gratin mixture, and stir. Add pieces of cheese.

    Bake at 480°F (250°C) for 15 minutes.
