Ground beef and potato casserole

Preheat oven to 400 degrees.

Steam potatoes in a double boiler until almost cooked thru, about 10 minutes

In a large cast iron pot, cook ground beef until brown, about 5-6 minutes
- 4
In same pot add potatoes, chunky salsa, chicken stock, salt and pepper. Cover and simmer until liquid is reduced, about 5 minutes, stirring occasionally

Remove from heat, stir in cheese, leaving some for top (about 1/4 c). Top with remaining cheese

Bake for 10-15 mins or until til cheese is melted

Sprinkle with cilantro and serve hot
