Raw mango rice is light and tasty.This aromatic rice is perfect for tiffin in summer.Raw mango and curry leaves make this dish very flavourful.

Cook rice in a pressure cooker with 2 cups of water and 1 tsp Salt.Give it 2 whistles and let it cool. Transfer it to a plate.

Heat oil in a pan,add hing and mustard seeds.Saute.Add dals,curry leaves, Cashew nut and whole red chilli.Fry it for 2 min.Then add raw mango and salt.Cover and cook for 3-4 min.

Add all the spices and saute.Add cooked rice and give it a good mix.Cook it for 4-5 min so that raw mango mixes in it well.

Sprinkle coconut and mix.Your delicious raw mango rice is ready to pack in your tiffin box.Garnish it with sesame seeds.
