I love FREE recipes that are made from left overs or things you normally throw away - this soup is so easy to make and freeze and great for a quick lunch or an amazing starter for a perfect dinner party. ENJOY :)

In a pan add the peelings / bases for the asparagus and cover with water then simmer for 5-10 mins until soft. (If using a uncooked potato add now)

Strain and leave om a bowl. Add the butter or oil and sweet off the onionfor 4-5 mins. Need to be cooked but not browned. then add the garlic and cook 2 more mins.

Add the milk and return the asparagus and pototo and 1/2 sotck cube and heat until just simmers. then carefully using a hand blender blitz until smooth. Get a 2nd pan with a seive over the top and push the soup through using the back of a spoon and discard the hard bits.

Return to heat add cream (Optional) and salt and pepper to taste. I add a few cooked chopped asparagus parts if have any left over (Optional) and serve. Easy to freeze before adding the cream if want to use later. ENJOY :)
