Prepare the Dough:
In a bowl, combine flour, yeast, sugar, and salt. Add warm water and olive oil, and mix until a dough forms. Knead for 5–7 minutes until smooth. Cover and let rise in a warm place for 40–60 minutes until doubled. - 2
Roast soybeans:
Drain the soybeans well and dry-roast them in a frying pan until they are slowly browned (about 10 minutes over medium to low heat). When the surface is slightly crispy, it is OK! - 3
Make the Filling:
In a skillet, heat olive oil. Sauté onion and carrot and mushroom until soft. Add roasted soybeans, curry powder, sugar, miso,and soy sauce. Cook until everything is coated and well combined. Season with salt and pepper. Let it cool slightly. - 4
Assemble the Calzones:
Divide the dough into 2 or 3 pieces. Roll each into a circle (about 15cm / 6 in). Place filling and cheese on one half, fold over, and seal edges well. - 5
Brush the surface with olive oil or egg wash and bake in a preheated oven at 200°C for 15 to 20 minutes, until browned.
