Traditional Andalusian Gazpacho Recipe

Prepare all the ingredients. Soak the crustless piece of bread in water. If you prefer gazpacho without bread, you can skip this step.

In a tall container, add the bread that has been soaked and lightly squeezed. Add peeled and chopped Roma tomatoes, peeled and chopped cucumber, seeded green bell pepper, chopped onion, and the garlic clove.

Add 1/2 teaspoon of salt, or to taste, and start blending everything together.

Once the vegetables are well blended, add the white vinegar or sherry vinegar (about 1 or 2 tablespoons, depending on your taste) and the extra virgin olive oil. It's important to use good quality olive oil, as it really enhances the flavor. Mix everything well and chill in the refrigerator for 1 hour.

Serve the gazpacho in a clay bowl, as is traditional, and garnish with chopped pieces of all the vegetables used in the gazpacho and a drizzle of extra virgin olive oil. Delicious gazpacho is ready to enjoy!
