#CA2025 I love salad and this one can be a meal. The cheesy tortellini adds creamy goodness. This is a basic start, as you can see I loaded it with lots of vegetables not in the recipe.

#CA2025 I love salad and this one can be a meal. The cheesy tortellini adds creamy goodness. This is a basic start, as you can see I loaded it with lots of vegetables not in the recipe.

Ingredients

  1. Salt and black pepper
  2. 20 ouncescheese tortellini
  3. 1/2small red onion thinly sliced
  4. 1 jar(10 -12 ounces) drained sliced roasted red peppers
  5. 2 ouncessalami or soppressata cut into bite sized pieces
  6. 1/2 cupextra virgin olive oil
  7. 3 tablespoonsbalsamic vinegar
  8. Crushed red pepper
  9. 3big handfuls baby arugula

Cooking Instructions

  1. 1

    In a pot of heavily salted water,boil the tortellini per package directions. Drain in colander and shake dry. Add red onion to colander and rinse pasta and onion under cold water until pasta is cool. Dry the pasta pot and put tortellini and onion in the pot.

    Add peppers, salami, oil and vinegar and stir to combine. Season to taste with salt, black pepper and crushed red pepper. Stir in arugula and refrigerate. (If you are making this ahead of time, lay arugula on top of pasta and store in airtight container in refrigerator up to 3 days,stir before serving.)
