Ingredients

2 servings
  • 300-400 gPumpkin
  • 200 mlWater *
  • 2 TbspSugar *
  • 2 TbspSoy sauce *
  • 2 TbspMirin * (If no Mirin, substitute 2 Tbsp White wine and 1 tsp Honey)
  • 1 pinchSalt *
  • Small amount of Butter

Steps

  1. 1

    Scoop out the seeds and cut pumpkin to bite size.

  2. 2

    Partially peel the skin. (leave some of the green skin for contrast)

  3. 3

    Cut off the corners to prevent it from crumbling. This is called "mentori".

  4. 4

    Boil the * ingredients in a pan and put pumpkin in it. (skin side down)

  5. 5

    Cook pumpkin with a lid until tender with medium heat.

  6. 6

    Put butter and turn off the heat.
