Delicious farm-to-table dish made with garden-fresh lettuce.

Sauté the garlic, tomatoes, and chili peppers in a skillet with a little olive oil.

Clean the large lettuce leaves. Add any small or damaged leaves to the skillet with the sautéed vegetables.

Let the mixture cook down, then add the pine nuts and golden raisins. Next, add the ricotta cheese and mix well.

Assemble the rolls by adding a piece of mozzarella to each. Place the rolls in a skillet with a little extra virgin olive oil and a few tablespoons of water (just a little).

Cook in the skillet for 5 minutes, covered at first, then uncover and cook over high heat to reduce the sauce.
