As always, here’s a flatbread to celebrate the Night of the Bonfires. I always lean toward savory over sweet, though I don’t mind a sweet treat either! Let’s get cooking. Enjoy!

As always, here’s a flatbread to celebrate the Night of the Bonfires. I always lean toward savory over sweet, though I don’t mind a sweet treat either! Let’s get cooking. Enjoy!

Place the flour, salt, and crumbled yeast in a bowl.

In a saucepan, combine the water, olive oil, and lard.

Once the lard has melted, remove from heat and let cool for a few minutes.

Add the liquid mixture to the flour and mix until you have a smooth dough.

You can make one large flatbread, two medium, or four small ones if using an air fryer and space is limited.

Shape the dough and prick it with a fork. Place in the air fryer for 10 minutes at 400°F (200°C). Remove, add the escalivada, and air fry for another 8 minutes. Top with smoked sardines, salt, pepper, and a drizzle of olive oil. Enjoy!
