Ingredients

30 minutes
  • For the dough
  • 2 2/3 cupsbread flour (about 350 grams)
  • 1 cubefresh yeast
  • 1/2 cupwater (about 120 ml)
  • 1/4 cupextra virgin olive oil (about 60 ml)
  • 1/4 cuplard (about 60 grams)
  • For the topping
  • Escalivada (roasted peppers, eggplant, and onions)
    Coca de escalivada con mojama, coca de recapte
  • Smoked sardines
  • Extra virgin olive oil
  • Salt and pepper

    Place the flour, salt, and crumbled yeast in a bowl.

    In a saucepan, combine the water, olive oil, and lard.

    Once the lard has melted, remove from heat and let cool for a few minutes.

    Add the liquid mixture to the flour and mix until you have a smooth dough.

    You can make one large flatbread, two medium, or four small ones if using an air fryer and space is limited.

    Shape the dough and prick it with a fork. Place in the air fryer for 10 minutes at 400°F (200°C). Remove, add the escalivada, and air fry for another 8 minutes. Top with smoked sardines, salt, pepper, and a drizzle of olive oil. Enjoy!
