These cookies are very moreish and easy to make.
Steps

Blitz almonds into fine crumbs using a food processor.

In a pan, boil butter, honey, and sugar on medium-low heat until combined.

Stir in rose essence, then add flour and mix well.

Add almonds and mix thoroughly.

Scoop small amounts, roll, and place on a baking mat, 3-4 inches apart.

Bake at 160°C for 8 minutes, turning halfway.

Cool completely before serving.
Tips
Ensure to turn the cookies halfway through baking for even cooking.
