Ingredients

  • 2 tbspoil
  • 2green chilli chopped
  • 1 inchginger chopped
  • 1 Cupfinely chopped carrot
  • 1 Cupfinely chopped beans
  • 1 Cupfinely chopped beetroot
  • 1 Cuppeas
  • 1/4 tspturmeric powder
  • 1 tbspred chilli powder
  • 1/2 tspgaram masala powder
  • 1/2 tspblack pepper powder
  • Salt as per taste
  • 2potatoes boiled and grated
  • 2 tsplemon juice
  • 1/2 Cupbreadcrumbs
  • 2 tbspchopped green coriander leaves
  • 1/2 Cupmaida/all-purpose flour
  • 1/4 Cupcornflour
  • 1 Cupbreadcrumbs for coating
  • Oil for deep frying

  1. 1

    Wash peeled and finely chopped vegetables chopped green chilli and ginger and keep aside

    In a pan heat oil and saute green chilli and ginger add finely chopped vegetables and saute until vegetables shrink slightly

    Now add spices and saute until vegetables are almost cooked Transfer to a mixing bowl and add boiled mashed potatoes breadcrumbs mix well all ingredients

    Add lemon juice salt and green coriander leaves mix well and firm a soft mixture.Now grease your palms with oil pinch a ball sized dough roll and shape to a leaf shape keep aside

    For slurry -In a small mixing bowl take all-purpose flour and cornflour salt and water and make smooth lump free slurry deep cutlet into slurry coat with breadcrumbs

    Meanwhile heat oil in a pan and deep fry cutlets both sides do not make the crowd fry 2-3 at a time
