Ingredients

Serves 8 servings
  • 1homemade spelt pie crust with lemon and maple syrup (see linked recipe)
    Pâte brisée à la farine d’épeautre, citron et beurre d’érable
  • 4 cupscherries (about 600 grams), fresh (picked from the garden, see tip in link)

  • 1 tablespoonmaple butter (brought from Quebec, use any maple butter)
  • 2 tablespoonsheavy cream
  • 1 tablespoonlight brown sugar
  • 2 tablespoonsall-purpose flour

30 minutes
  1. 1

    Remove the stems and wash the cherries.

    Pit the cherries. Preheat the oven to 400°F (200°C). Grease a tart pan.

    Place the dough on a floured surface and roll it out.

    Transfer the dough to the tart pan and trim the edges evenly.

    Prick the bottom of the crust with a fork. Crack the eggs into a mixing bowl.

    Add the maple butter and mix quickly.

    Add the heavy cream and whisk until well combined.

    Sift in the flour and add it to the mixture.

    Mix well, then pour the cream mixture over the crust.

    Add the cherries and fold the edges of the dough inward toward the pan.

    Create a decorative pattern if desired, then sprinkle with brown sugar.

Tips

Comment avoir des fruits du jardin toute l année

Si comme moi vous avez la chance d avoir un jardin et des arbres fruitiers pensez à congeler vos récoltes vous aurez des fruits du jardin garantis sans pesticides toute l année

Comment graisser un moule uniformément et de façon économique

Faire fondre le beurre puis le mettre dans un flacon spray pulvériser ensuite vos moules

Comment égaliser une pâte sur un moule

Passer le rouleau à pâtisserie sur les bords du moule après l avoir garni de pâte

Comment réussir facilement des gâteaux

Lorsque je fais des gâteaux je tamise systématiquement ma farine avec la levure

Comment décorer les bords d une tarte ?

Pour avoir de jolies bordures sur une tarte j utilise les dents d une fourchette, la pointe d un tire bouchon, une roulette à pâtisserie etc..les possibilités sont infinies

Comment bien faire refroidir des gâteaux

Pour faire refroidir des gâteaux je les les sors toujours du four avec la grille
