This is a simple shaped steamed bun that's great for beginners, though your hands might get tired!

Divide the filling into 7 portions and roll each into a ball. Refrigerate until ready to use.

Mix the dough ingredients until smooth. You can use a mixer and pasta roller, or knead by hand by repeatedly rolling out and folding the dough until the center is fine and smooth when cut.

Divide the dough into 7 portions.

Roll each portion into a round shape with a thicker center and thinner edges. Place a portion of filling in the center.

Shape each bun into a teardrop.

Pinch the tip to form a point.

Starting about 3/4 inch (2 cm) from the tip, use scissors held at a 30-degree angle to snip the 'spines' of the hedgehog. (Your hands may get tired from all the snipping!)

Attach the sesame seeds for eyes and press them in gently.

Let the buns rise at 100°F (38°C) for 40 minutes.

Steam over boiling water for 17 minutes, then let sit with the lid on for 3 more minutes.
