Ingredients

2 servings
  1. 200 g(cooked) Brown rice
  2. 150 gGround pork
  3. 1/2 cup(julienned) Carrot
  4. 1/2 cupCorn
  5. 1/2 cup(shelled) Edamame
  6. 1/2 cup(sliced) Cucumber
  7. 1/4 cup(sliced) Mushrooms
  8. 1(sliced) Hard-boiled egg
  9. 1/2(sliced) Avocado
  10. 1 tbsp(chopped) Green onion
  11. 1/4 cupRoasted chickpeas
  12. 1 tbspChili crisp or chili oil
  13. Dressing
  14. 1 tbsp(minced) fresh Ginger
  15. 1 clove(minced) Garlic
  16. 1 tbspSoy sauce
  17. 1tpsSesame oil

Steps

  1. 1

    Cook brown rice according to package instructions.

  2. 2

    Sauté ground pork with ginger, garlic, soy sauce, and sesame oil until fully cooked.

  3. 3

    Prepare and slice all vegetables and toppings.

  4. 4

    Mix all dressing ingredients in a bowl until smooth.

  5. 5

    Arrange rice in a bowl, then top with pork, veggies, egg, avocado, and chickpeas.

  6. 6

    Drizzle with miso ginger dressing and chili crisp or chili oil. Sprinkle green onion on top.

Tips

Feel free to customize the veggies based on your preference or what you have on hand.
