A delicious way to use up leftover rice and dishes from the night before. Always remember: don't keep leftovers for too long—this recipe uses only last night's leftovers. The savory beef and the aroma of egg fried rice make this dish irresistible.

Cut the beef into small pieces with kitchen scissors. Beat the eggs with the green onions. Heat oil in a pan, pour in the egg mixture, and scramble until just cooked (do not overcook the eggs). Remove and set aside.

Break up the leftover rice with your hands. Heat oil in the pan, add the rice, and stir-fry until heated through and evenly separated.

Push the rice to one side of the pan. Add the beef to the empty side and stir-fry until heated, then mix evenly with the rice.

Push the rice to one side again. Drain any liquid from the vegetables, add them to the empty side, and stir-fry until hot. Add the eggs back in, then mix everything together.

Season to taste with vegetarian oyster sauce, chicken bouillon powder, salt, and pepper. Serve hot!
