West African Peanut Soup
A great vegan soup for any time of year
Steps

In large sauce pan, sauté onion until translucent

Add carrots and ginger, cook 4 minutes

Add sweet potato, pepper, juice, and broth

Summer on medium-low heat 20 minutes or until all veggies are soft

Remove from heat

Add peanut butter and mix thoroughly

With immersion blender (or in standard blender) purée soup
- 8
Garnish with scallion and roasted peanuts
