Ingredients

1 medium onion, diced
  • 3medium carrots, peeled & diced
  • 3 clovesgarlic, minced
  • 2 Tbspgrated ginger
  • 2medium sweet potatoes, peeled & diced
  • 1/2 tspcayenne w
  • 2 cupstomato juice
  • 4 cupsveggie broth or water
  • 1 cuppeanut butter
  • Scallions, chopped for garnish

Steps

  1. 1

    In large sauce pan, sauté onion until translucent

  2. 2

    Add carrots and ginger, cook 4 minutes

  3. 3

    Add sweet potato, pepper, juice, and broth

  4. 4

    Summer on medium-low heat 20 minutes or until all veggies are soft

  5. 5

    Remove from heat

  6. 6

    Add peanut butter and mix thoroughly

  7. 7

    With immersion blender (or in standard blender) purée soup

  8. 8

    Garnish with scallion and roasted peanuts
