Beef Carpaccio with Cilantro and Parmesan

Place the steaks in the freezer for 15 minutes to make them easier to slice. Lightly brush them with olive oil.

Slice each steak very thinly. Arrange the slices in overlapping circles on a serving platter.

Rinse and dry the cilantro.

Finely chop the cilantro. Pour a little olive oil into a small bowl.

Squeeze the half lemon and add the juice to the bowl. Add the balsamic vinegar.

Add the Espelette pepper and mix.

Add the chopped cilantro and mix again.

Drizzle the mixture over the carpaccio and sprinkle with grated Parmesan.
