Fresh coconut burfi

#FA Coconut burfi or thenga burfi is one of my most favorite sweet treats ever. I’ve only ever had it homemade with freshly grated coconut, flavored with freshly pounded green cardamom, and sweetened with sugar. The texture, smell and taste of fresh coconut burfi is something I can conjure up from my memories at any time. It is such an integral part of my childhood and still remains one of my favorite treats ever.

#FA Coconut burfi or thenga burfi is one of my most favorite sweet treats ever. I’ve only ever had it homemade with freshly grated coconut, flavored with freshly pounded green cardamom, and sweetened with sugar. The texture, smell and taste of fresh coconut burfi is something I can conjure up from my memories at any time. Cooking Instructions

Take coconut pieces and add it to mixer. Grind it until slightly fine. You can use freshly grated coconut too.

Brush little ghee in a tray and keep it ready. Add 1 teaspoon ghee to a pan add coconut. Saute for 2 minutes until moisture leaves.

Add sugar, milk to this and keep stirring... Keep cooking and mixing this till it starts to thicken and leaves the sides of the pan, it will take around 15 mins...

Add in ghee, cardamom powder and mix well. Keep this mixing. It will start to leave the sides of the pan and foam around the edges. At this point. Pour this into a greased plate and allow it to cool down. Smooth the top of the burfi with a spatula.. garnish with cashews...

After a couple of minutes, while the mixture is still quite warm, use a greased knife or pizza cutter to cut it into smaller pieces (either square, rectangle or diamond shaped pieces).
Cool it completely, remove the individual pieces and store them in an airtight container. - 6
