Cola wings (可乐鸡翅) is a super popular Chinese home-style dish where chicken wings are braised in cola cola (the soda) along with soy sauce and aromatics. The cola gives the wings a caramelized sweetness, balances the saltiness of soy, and creates a glossy, sticky sauce that coats the wings beautifully!!

Best eaten with a bowl of rice and a side of veggies!

Ingredients

2-3 servings
  1. 12 pcwings
  2. 2 tbspsoy sauce
  3. 1 tbspshaoxing wine
  4. optional- 1 tbsp dark soy sauce for color
  5. 1cinnamon stick
  6. 1/4white onion
  7. 1-2ginger slice
  8. 3garlic cloves
  9. 5whites of green onion
  10. 1-2 pcstar anise
  11. 1 cancola or enough to cover the wings
  12. optional- pinch of salt
  13. 1-2 tbspcooking oil
  14. optional- green onions as garnish

    The sauces you need in photo form. Prepare the aromatics.

    Pat dry the wings and pan fry the wings for 2-3 mins on each side on medium heat or until golden brown. This helps the skin to firm up and hold their shape better and won't get mushy during the simmering phase. Searing it first also helps to render out some of the fat and moisture first so the braising liquid doesn't get diluted with excess chicken juices.

    Remove excess oil from the wok/pan. Add aromatics and braising liquid. Pour 1 can of cola or enough to cover the wings.

    Cover and simmer on medium low for 10-15 mins (flipping once halfway). Taste test sauce and add a pinch of salt if needed.

    Remove lid and simmer for 5 mins or until the sauce thickens. Garnish with green onions.
