A cross between a beef carpaccio and ceviche. This dish is simple yet so refreshing! Perfect on a hot day.

Season beef with salt and sear in hot oil on all sides.

Slice very thinly and lay out on plate in single layer.

Mix 1/2 cup lime juice with 2 tbsp of sugar and pour directly on beef. Marinade for at least 30 minutes or until beef starts to “cook”. Alternatively, blanch sliced beef in boiling water for 3 seconds then marinade in lime juice, if running low on time.

Make nuoc cham dressing with 2 tbsp lime juice, sugar, garlic, chili, and fish sauce.

Arrange sliced pepper and onions on top of beef, pour marinade on top, garnish with peanuts and cilantro.
