Ingredients

8 rolls
  • For the dough:
  • 3 1/4 cupsall-purpose flour (400g)
  • 7 tablespoonsmilk (100g)
  • 7 tablespoonswater (100g)
  • 1egg (use the white for the dough, the yolk for brushing)
  • 1/4 cupsunflower oil (60g)
  • 1/4 cupplus 2 tablespoons unsalted butter, softened (60g + 2 tablespoons/30g for layering)
  • 1/3 cupgranulated sugar (60g)
  • 1 1/2 teaspoonssalt (7g)
  • 1/2 ouncefresh yeast (15g) or 2 1/4 teaspoons active dry yeast (7g)
  • For brushing: 1 egg yolk

Steps

    Makes 8 large brioches

    ⏱ Preparation time

    Prep: 35 minutes

    First rise: 2 hours 30 minutes

    Bake: 20 minutes

  2. 2

    Dough

    In the bowl of a stand mixer fitted with a dough hook, add the flour, sugar, salt, and yeast.

    Add the water, milk, and egg white.

    Mix on low speed.

    Add the oil, then mix on medium speed until the dough is smooth.

    Cover and let rise for 1 hour 30 minutes at room temperature.

    Shaping

    Punch down the dough.

    Lightly flour your work surface.

    Roll the dough into a square and spread 2 tablespoons (30g) of softened butter over it.

    Fold the dough in half and let it rest for 10 minutes.

    Cut into strips, fold each strip in half, twist, and shape into rings, pinching the ends to seal.

    Second rise

    Place the brioches on a baking sheet lined with parchment paper.

    Cover and let rise for 20 minutes.

    Baking

    Preheat the oven to 350°F (180°C), convection setting if available.

    Brush the brioches with the egg yolk.

    Bake for 20 minutes, until golden brown.

    ✨ Tip: These brioches are delicious when still warm, but they also stay soft if stored in a clean kitchen towel.
