Arborio Rice Vegetable and Soya Chunk Risotto

Risotto is a classic Italian dish made with Arborio Rice. Arborio is a short grain rice that is used to make rice pudding, stuffed vegetables and commonly used to make risotto. It contains high amount of starch that makes it creamy when cooked. It has a chewy texture even after cooking. They are low in fiber but gluten free. Usually risotto is paired with Mushrooms, parsley or fresh herbs but I tried it my way and that too came out nice to try!

Boil soya chunks in water until soft, then squeeze out excess water.

Heat ghee in a pan, sauté vegetables until slightly tender.

Add boiled soya chunks and sauté together with vegetables.

Add Arborio rice and stir to combine.

Pour in water or broth, season with salt, pepper, and mixed herbs.

Cook on medium heat, stirring occasionally, until rice is creamy and cooked through.
Tips
For a creamier texture, stir the risotto frequently and add more broth as needed.
