I think enchiladas are delicious and have tried a lot of different recipes for them. This is what I've settled on as my preferred method of preparation.

I think enchiladas are delicious and have tried a lot of different recipes for them. This is what I've settled on as my preferred method of preparation.
Steps

Dice 3/4 chicken breasts into bite-size chunks, then put in pan on med-high with oil, paprika, garlic powder, onion powder, salt and pepper, and a tin of chopped tomatoes.

Dice 2 onions, a pepper and a tomato (not strictly necessary), then add to pan. Cook for ~30 mins total (or til chicken is cooked through).

Whilst this is going, start making sauce on med-high in a small pan. toast small tsp chilli powder, cumin, garlic powder, salt and paprika in a few tbsp oil until fragrant.

Whisk in flour (3/4 tbsp), add a tin of chopped tomatoes, then add a tbsp bouillon and 50cl boiling water. Continue to whisk until thickened on high heat, combine with more flour if necessary.

When chicken is done, divide into 8 and roll into wraps with some grated cheese.

Fit all 8 into a large glass dish, then cover with the sauce and the rest of the cheese. Cook at 200°C for 25 mins, then serve.
