Paneer is a high-quality, complete protein, containing all nine essential amino acids that the body needs for proper function. This makes it an especially valuable dietary staple for vegetarians.
Xacuti is a traditional Goan curry made with white poppy seeds, sliced onions, toasted grated coconut, and large dried red chillies. It is usually prepared with chicken, lamb, or beef. But I have made it's vegetable version with paneer and mix vegetables.

Xacuti is a traditional Goan curry made with white poppy seeds, sliced onions, toasted grated coconut, and large dried red chillies. It is usually prepared with chicken, lamb, or beef. But I have made it's vegetable version with paneer and mix vegetables.
Steps

Heat oil in a pan and lightly fry paneer pieces.

Wash and cut all veggies.

Grind onion, dry coconut, poppy seeds, green chilli and curd together into a fine paste.

Heat remaining oil in the same pan and shallow fry all veggies.

Now remove veggies from pan and put cinnamon sticks in it. Pour blended paste and saute for a minute.

Add all powdered spices and saute again. Now add salt and cook till oil starts separate.

Add fried vegetables and mix well.
Add 1/2 cup water and cook for 5 minutes. - 8
Now add fried paneer and coconut milk. Mix well and cook for 2 minutes.

Switch off the gas and serve the vegetable Xacuti curry with mix vegetable pulao.
