Pearl Millet (Bajra) Phirni
Steps
- 1
Soak the roasted bajra in water in a small bowl. Soak for 30 minutes, drain, then grind to a coarse paste using up to 1 tbsp more water as needed.
- 2
Heat the milk 🥛 in a saucepan over medium flame 🔥 until it just begins to simmer.
- 3
Stir in the coarsely grounded bajra, cook and stir continuously for about 15-20 minutes until the mixture thickens.
- 4
Add jaggery, saffron-infused milk, cardamom powder & nuts. Continue stirring for 3-4 minutes Or until the jaggery fully dissolves and the phirni turns creamy.
- 5
Transfer to a serving bowl garnish with chopped nuts & dry rose petals. Serve chilled.
- 6
I used Amul gold milk 🥛 but I throw the packet so I take pic with Amul Tazza Milk
