Steps

Preparing the Batter :-First, sift the besan (chickpea flour) into a bowl, add hing (asafoetida), salt, grated ginger, and water to make a smooth batter. Cover and let it rest for 15 minutes. Meanwhile, place water in a steamer and heat it.

Add Baking Soda :
Just before steaming, gently fold in baking soda into the batter. - 3
Prepare the Steaming Tray :
Line a steaming tray with a banana leaf, muslin cloth, or a silicone liner (ensuring it’s oil-free and non-stick) - 4
Pour the Batter :
Pour the prepared batter into the lined steaming tray. - 5
Steam :
Steam the batter for 15–20 minutes or until it’s fully cooked - 6
Cool and Cut :
Let it cool slightly, then cut it into squares or desired shapes. - 7
Serve :
Serve with red chili jam or green chutney for added flavor. - 8
Notes :
∆ This dish is healthy as it’s steamed and doesn’t require oil.
∆ You can customize the chutney or accompaniment based on your preference.
Tips
∆ Add baking soda only at the end to keep it fluffy.
∆ Cover while steaming to prevent water droplets.
∆ Banana leaf or muslin cloth adds natural aroma and keeps it oil-free.
