Koshimbir And Paneer Mini Fusion Bruschetta/ Indian Style Bruschetta

Being a nutritionist, my goal is to derive and try out recipes that are high on nutrition but low on calories, fat and sugars. When I got to know about this challenge , I decided to try out this Indian style version of bruschetta. I used whole wheat bread instead of the regular french breads made with refined flour. I also skipped oil completely to lower the calories and for protein, I added crumbled cottage cheese on top. For the topping, I replaced the regular tomato and olive oil mix with Maharashtrian staple salad koshimbir which is a spicy combination of chopped onion, tomato , green chillies, coriander, lemon juice and spices. First, take a bowl. Add the chopped vegetables, seasonings and gently mix by turning with a fork.

Cut edges of bread slices and cut into oblong shapes. Toast without oil on a hot pan or tawa till golden and crisp from both sides.

Arrange on a plate. Top each piece with the prepared koshimbir. Then top with crumbled paneer. Garnish with coriander leaves.

Transfer to a serving plate. Serve immediately with your choice of mocktail or beverage as per taste and enjoy!
Tips
Make sure that the salad is freshly made and not kept for long.
Serve the Bruschetta immediately, don't keep it for too long or the juices will make it soggy.
