Katlu pak/fudge is traditional food prepared to supplement the nutritional needs of women during the postnatal period and induce lactation.
Katlu is the Gujarati way of nourishing the nursing mothers as well as the infant. This rich preparation made with an exhaustive list of ingredients is a true labour of love. Ghee, kopra (dry coconut), gond, almonds, khus khus and a mix called Katlu/Batrisu (Batris means 32 in Gujarati) that includes 32 herbs and spices are used liberally in this body warming preparation.

Ingredients

about 2 kg
  1. 500 gramswhole wheat flour coarsely ground
  2. 500 gramsghee
  3. 400 gramsjaggery
  4. 200 gramsgond
  5. 1 teaspoonwhole pepper
  6. 2 tablespoonsdried coconut flakes, (chopped)
  7. 100 gramsKatlu (Batrisu) ready-made
  8. 1 teaspoondry ginger powder/ sonth powder
  9. 1 teaspoonganthoda powder (optional)
  10. 1/4 teaspoonturmeric powder (optional)
  11. 100 gramscashews, almonds chopped
  12. 1 teaspoonpoppy seeds
  13. 2 teaspoonsdesiccated coconut

    To begin with make sure you have all your ingredients in place.Now heat 1/2 of ghee in a thick bottomed pan and fry the gond, whole pepper and chopped coconut flakes and keep it aside.

    Now add the remaining ghee to the pan and roast the flour until golden brown in colour. Stir continuesly in between.

    Once the flour is brown in colour, add all the ingredients except jaggery and dry fruits,poppy seeds. Mix it well.

    Now Mix everything properly and after 2 minutes, remove from heat and add jaggery mix it well. Spread this mixture on a plate greased with ghee. Add chopped dry fruits and poppy seeds in it. Now sprinkle desiccated coconut on top. and press it lightly with a spatula.

    This pak cools down quickly, so cut it only when it is slightly warm. So Winter special vasanu Katlu Pak is ready.
