  1. 250g, washed and chopped Fresh fenugreek (methi) leaves
  2. 2 cupsAll-purpose flour
  3. 1/2 cupGram flour (besan)
  4. 1 tablespoonRice flour
  5. 1 tablespoonRed chili powder
  6. 1/4 tablespoonTurmeric powder
  7. 1/2 teaspoonSalt
  8. 1/4 tablespoonCumin powder
  9. 1/2 tablespoonCarom seeds (ajwain)
  10. 1/2 tablespoonCoriander powder
  11. 1 tablespoonSesame seeds
  12. as neededfor frying Oil

    In a large bowl, mix all-purpose flour, gram flour, and rice flour.

    Add red chili powder, turmeric, salt, cumin powder, coriander powder, sesame seeds, and carom seeds. Mix well.

    Add chopped methi leaves and combine.

    Gradually add water and knead into a smooth dough. Rest for 10 minutes.

    Divide dough into small balls. Roll each into a flat disc like chapati.

    Heat a tawa (griddle). Cook each thepla with a little oil or butter on both sides until golden.

    Serve hot with tomato sauce, tomato-onion salad, or curd salad.
