Chop onion and green garlic finely. Grated the ginger.

Boil green peas and carrot pieces until soft.

Heat ghee on medium flame. Add cumin seeds, mustard seeds, and hing.

When mustard seeds crackle, add onion, green garlic, and ginger. Sauté.

Mix all masala powders with a little water to make a paste.

Add masala paste to pan and sauté.

Add tomato puree. Cook until ghee separates.

Add boiled peas and carrots. Mix well.

Add water as needed. Cook for 2 minutes.
Tips
Adjust the spice levels according to your taste. You can also add a squeeze of lemon juice for extra flavor.
