Saute onion in some olive oil

Add salt and pepper to taste to onion

Add 1/2 cups of washed red lentils and about 3 cups of water

Add diced zucchini and diced carrot

Boil, then simmer for 20 minutes. Once mixture cools a bit, place in blender, or use an immersion blender. Blend until smooth. Then return to stove and boil for another minute
