Add flour and salt into a wide bowl. Make a well in the middle and pour in the egg, water and olive oil. Use your hands to slowly draw the flour into the liquid until you have a dough.
Knead for about 1-2 mins in bowl until comes together then turn out onto a flour-dusted work surface, knead the dough for about 3–4 minutes until smooth and elastic.. Cover with plastic wrap and leave to rest in the refrigerator for 30 minutes. - 2
In a medium bowl, whisk together the yogurt and garlic. Season with salt to taste. Cover and set aside.

In a large mixing bowl, stir together the meat and onion and all juices. Season with a good pinch of salt and pepper and mix well. Cover and set aside.

Heat Oven to 170c. Line a large Baking sheet with parchment paper and oil it. (I use a baking spray release but any oil fine)

Cut the dough into 3 equal pieces. Roll each piece into round dough balls. Keep the dough covered with a lightly damp tea towel as you go to prevent it from drying. Then Roll out with a rolling pin to about a couple of mm thickness. Then cut into 1 Inch squares.

Add a Pea Size amount of meat mixture to the middle of each square. Then fold 2 corners together and then repeat until you make like a little crown shape. Put onto baking sheet and repeat. Do with all 3 balls. Then Bake for 8 mins until very Slightly Browned. Allow to Cool. You can now Freeze if useing later or move to next steep.

Fill a large pot with water and bring to a boil over high heat. Season the water well with salt and gently add the dumplings. Maintain a gentle simmer and cook until the dumplings float, about 8 to 10 minutes. Drain and return the cooked manti to the pan off the heat. Toss with a drizzle of olive oil to prevent sticking.

Heat the oil in a wide pan until shimmering, then add the tomato paste. Stir in the Aleppo pepper, mint, and sumac. Simmer, stirring, until fragrant, about one minute. do not over heat.

Too Serve put a portion on a dish, add a few spoons of the Yogurt ontop around. Add a large drizzel of the spicy oil. Add more mint and Sumac and EAT - if you can wait to serve others lol - ENJOY :P
