This is perfect for on the-go school mornings, my kids love to snack on them.

Preheat oven to 350°F. Spray a 24-cup mini muffin tin with cooking spray or line with mini liners.

In a medium bowl, whisk together 1⅓ cups flour, 1 teaspoon baking powder, and ½ teaspoon salt.

In a separate bowl, cream 8 tablespoons softened butter and 1 cup sugar on medium speed until light and fluffy, about 2 minutes.

Add 2 eggs and 1 teaspoon vanilla, mixing until fully incorporated.

Add 1/2 cup of Greek yogurt (or sour cream), mix until fully incorporated.

Add dry ingredients and mix just until combined.

Fill each mini muffin cup ¾ full. Top with sprinkles.

Bake at 350°F for 12–15 minutes, until a toothpick comes out clean or with a few moist crumbs.

Cool in the pan 5 minutes, then transfer to a rack.
Tips
Store in an airtight container for up to 3 days, my kids usually l eat them before that lol
