When I think about iftar in our home, I don’t just think about food — I think about moments. The quiet few seconds before the adhan. The way everyone instinctively reaches for dates first. And then, somewhere between tradition and celebration, there’s always a big, beautiful bowl of fruit chaat.

In a pot/large skillet, add water, dates, mango slices, cashews, raisins. Mix, cover and cook 3 minutes or until bubbling.

Add sugar and bay leaf. Mix and cook till sugar is dissolved.

Add salt, mix and cover and cook 5 minutes.

Squeeze in lemon juice, orange juice, chilli powder and panchporan spice. Mix well. Remove and cool completely at room temperature.

Mix in fruit and mix gently. Chill for 30 minutes before serving garnished with reserved arils and if desired, chopped nuts.
