Mediterranean roasted drumsticks

There is a certain type of enchantment that happens in the kitchen approximately thirty minutes before the sun goes down. The home smells like roasted spices, the table is being set with a little more care than usual, and—let’s be honest—everyone is checking the clock every two minutes.
This Mediterranean roasted drumsticks platter is the perfect solution if you're searching for something that seems a little more "special occasion" than a typical stew but is much simpler than a full-fledged feast.
When you've been fasting all day, your first bite should be worth the wait. This dish hits that perfect trifecta of protein, complex carbs, and a zesty "kick" to wake up your palate. Instead of a heavy roast, these drumsticks bring the crunch and the char. The glaze provides that hit of immediate energy from the honey, balanced by the slow warmth of the spices.
You can prep this ahead by marinating the chicken in the fridge overnight. While you are making the remainder of the iftar menu, simply place it in the oven.
You can even air-fry these for half the time it takes in the oven!
