Vegetable and Mushroom Curry

I'm originally from the North, so even though I love curry, I prefer it lighter and less rich. After making it many times, I'm really happy with this recipe. The flavors are balanced and mild, not too strong or heavy. This dish is delicious served with rice, noodles, or bread.

Cut the potatoes and taro into cubes and fry until golden. Cut the tofu into cubes and fry until golden.

Cut the broccoli into bite-sized pieces. Cut the green beans into 1 to 1 1/4 inch pieces. Slice the carrot into bite-sized pieces.

Heat a pan and add 1 tablespoon of vegetable oil. Add the curry powder and sauté over low heat until fragrant and the oil turns yellow, being careful not to burn the curry.

Add the potatoes, taro, carrots, and mushroom stems. Season with salt, bouillon, and sugar. Stir for a few minutes.

Pour in the soy milk and simmer over low heat for 5 minutes. Add the fried tofu. Add the lemongrass stalks (cut into pieces and lightly smashed) and continue to simmer over low heat until the vegetables are tender, about 10 minutes. Add about 1 1/4 to 1 2/3 cups water (300–400 ml) as needed.

Add the broccoli and green beans. Cook for another 5 minutes, adjust seasoning to taste, then turn off the heat.
