Ingredients

2 servings
  • 200 gUdon noodles
  • 4 piecesFish cake (chikuwa)
  • 6 piecesDumplings (gyoza or wonton)
  • 4 piecesQuail eggs
  • 5 gSeaweed
  • 500 mlSoup stock (dashi or chicken broth)
  • 2 tbspSoy sauce
  • 1 tbspMirin
  • 1 stalkGreen onions (optional)

Steps

  1. 1

    Boil the soup stock in a pot.

  2. 2

    Add soy sauce and mirin, then bring to a simmer.

  3. 3

    Add udon noodles and cook until almost tender.

  4. 4

    Add fish cake, dumplings, and quail eggs. Simmer for 3-4 minutes.

  5. 5

    Add seaweed and green onions, cook for 1 more minute.

  6. 6

    Serve hot.
