Getting into it's practice, finally I successfully made the spring roll sheets at home. The sheets turned out superb and crispy.

Getting into it's practice, finally I successfully made the spring roll sheets at home. The sheets turned out superb and crispy.
Steps

For Spring Roll Sheets: Sieve maida,add in salt,oil and mix. Adding water, as needed, knead a medium consistency dough.

Rest the dough for 20 minutes. Take 2 small portions of the dough.

Roll into small roundels, using some dry maida. Apply oil well. And then dip one oiled roundel into maida. Using minimum quantity of maida,roll into a big and thin circular sheet.

Place it on a lightly heated nonstick tawa. Roast very lightly on both sides. When first side is slightly done,turn and roast the other side also.

Do not change colour of the sheet while roasting. Because of the steam created inbetween the 2 joined sheets, they will get separated easily.

Keep the separated sheets in a pile and cover lid.

Homemade spring roll sheets are ready.

For Sauce Mix: Mix all the mentioned ingredients and mix.

Boil the noodles,chop the vegetables and prepare the coarsely chopped ggg, using a chopper.

For Stuffing: In oil add ggg and saute on high flame for 30 secs. Add in onions and saute for 30 secs.Do not overcook any vegetable.

Add in carrots, capsicum and cabbage.Mix and immediately add in the Sauce Mix.

Mix on high flame.Taste and add any ingredients if required.

Add in the secret ingredient, mix and switch off gas. Transfer onto a plate and cool completely. Ready the maida slurry.

Now all the components for Spring Rolls are ready.

Shaping the Spring Rolls: Take a sheet,place stuffing and apply slurry on the circumference using a brush. Give first fold and seal well. Now fold on both sides. Give the final roll and seal well. Roll tightly.

Heat oil and deep fry the spring rolls. When crispy and done take out on an absorbent paper. Crispy Spring Rolls are ready. These can be air fried too.

Tips
1. Apply oil and maida properly for the sheets to separate the sheets easily.
2.Keep the gas flame slow while making the spring roll sheets.
3.Cover and keep the sheets,else they will get dry and crack while shaping the spring rolls.
4.We can cut these into strips and make samosa pattis
5. Cut into squares and use for wantons.
6. Prepare the stuffing on high flame only.
7. ⭐1 tsp cornflour is the secret ingredient to keep the stuffing dry and bounded.⭐
8 These sheets can be stored in freezer.
