Every morning I like to try something new, and today, Saturday, I made this delicious dish inspired by yuca cheese fritters.

Peel the yuca and cook until soft, then remove the fibrous veins.

Mash the cooked yuca well in a bowl until smooth.

Add salt and the egg, then knead until you have a uniform dough.

Take a portion of the dough and shape it into small balls or cylinders.

Flatten each piece, place cheese in the center, and seal well.

Heat oil over medium heat and fry the fritters until golden brown on both sides.

If you prefer to bake them, preheat the oven to 350°F (180°C), place the fritters on a baking sheet, and bake for 20–25 minutes or until golden brown.
