  • 1 canCorn (canned)
  • 2large Potato
  • 2Carrot
  • 1Yellow onion
  • 2 clovesGarlic
  • 2 cups (480 ml)Plant milk
  • 2 cups (480 ml)Water
  • 2Vegetable stock cubes
  • 3 tbspNutritional yeast
  • to taste Salt
  • to taste Pepper
  • 0.25 cup (30 g)Plain flour
  • 1 tspThyme

    Cut all vegetables into bite-sized pieces.

  2. 2

    Fry onion, carrots, and garlic in a pot until softened.

  3. 3

    Add flour and thyme, continue frying until flour turns brown.

  4. 4

    Add potatoes, nutritional yeast, water, stock cubes, and plant milk.

  5. 5

    Boil for 8 minutes until potatoes are soft.

  6. 6

    Add corn, salt, and pepper. Stir and heat through.

Tips

Frying the flour and thyme until brown adds depth of flavor to the chowder.
