Ingredients

4 servings
  1. 350 gtagliatelle, or pasta of your choice
  2. 2 tbspolive oil
  3. 1small red onion diced
  4. 3garlic cloves crushed
  5. 5 tbspcrème fraîche
  6. 1lemon zested and juiced
  7. 2 tbspgrated parmesan
  8. 200 gsmoked salmon
  9. 30 gdill, finely chopped

  1. 1

    Bring a pan of salted water to the boil and cook the pasta until al dente. Meanwhile, heat the oil in a large frying pan over a medium heat. Add the onion then the garlic and fry for 2-3 mins until softened but not coloured. Stir in the crème fraîche, lemon juice, Parmesan and 2 ladles of pasta cooking water. Allow to bubble gently for 1 min.

    Mix in the chopped dill. Drain the tagliatelle and mix into the sauce in the frying pan. Cook for a further 2 mins or until reduced to a creamy sauce that coats the pasta.

    You can tear the smoked salmon into small pieces and add to the creamy sauce or roll them up like I did and place on top of the pasta. Season with black pepper, then divide between 4 plates. Garnish with the lemon zest and top with a handful of grated cheese.
